Ingredients:
Muffins
- 5 whole ripe bananas
- 1 c light brown sugar
- ¾ c butter, room temp
- 2 whole eggs
- 2 t vanilla extract
- 1 t baking powder
- ½ t baking soda
- ½ salt
- 2 c All-Purpose flour
Brown Sugar Topping
- ½ c flour
- ½ c brown sugar
- ¼ t salt
- ½ stick butter, cold & cut into cubes
Directions:
Muffins
Preheat oven to 375 degrees. Either spray muffin tins or use liners.
Mash two of the bananas and set aside. Mix butter and brown sugar until light and fluffy. Add remaining three bananas & mix well. Scrape sides of bowl and add eggs, vanilla, baking powder, baking soda and salt. Mix until well combined.
Fill muffin tin ¾ way full. Top with crumb topping.
Bake for 20-25 minutes.
Crumb Topping
Using a mixer, add flour, brown sugar, salt and mix until well combined. Add the cubed butter and mix until crumbly. Divide evenly on batter in muffin tins.
